25 years after we started at Erasmus University in Rotterdam we still keep seeing each other. Originally, plans were made for Ibiza, but everyday logistics changed this to Knokke (Belgium). Probably for the best, because we had a great weekend full of catching up, discussing real issues in life, treating ourselves at the Spa, with yoga, playing golf and with good food.
The only dinner we had outside our lovely and luxurious weekend-home in Knokke was at Pure C, Cadzand. The second venue of Sergio Herman, the 3 Michelin star chef of restaurant Oud Sluis in Sluis. (www.oudsluis.nl) (Both situated at the most southern isle of Zeeland, The Netherlands)
Pure C is more laid back, very contemporary and serves sublime food. Different kind of preparations were served in a very original way. The 'menu degustation' was a perfect combination of light dishes, a lot of taste and a surprising use of ingredients. The white wine (chef's choice) made a perfect match. Apparently, Ibiza meets Zeeland has been the inspiration for Sergio for both the interior as the food. We just loved it, and not only because of the very coincidental mix of both sites. Definitely a place where I will return.
